My family is very Swedish. I went to Swedish school in the summer, most of the town was of Swedish descent, and my grandma made the best Swedish pancakes.

Here is what you’ll need:

  • 3 eggs
  • 2 cups of milk
  • 1 cup of flower
  • 1 tablespoon of sugar
  • a  pinch of salt
  • 2 tablespoons of melted butter

Beat mixture in a large bowl, then pour a thin layer into a nonstick pan covered with a little bit of oil, like you would cook a regular pancake. Wait until the top appears dry and completely cooked, do not attempt to flip it like a pancake. Use a spatula to scoop it onto a plate. They are best served warm, and covered with butter and sugar!
