Many others have gluten sensitivity, a disorder that displays many similar symptoms to Celiac Disease but lacks the intestinal damage. Regardless of the reason, the newfound awareness of gluten disorders and a new popularity in a gluten free diet have contributed to the rise of gluten-free options across the nation.
